A sushi chef whose restaurant is located in Chicago, IL has taken edible ink to a new level. Using his Canon i560 inkjet printer, he has swapped out the toner for food based ink. Among the things he uses to produce his "inks" are juiced tomatoes, carrots and purple potatoes. You can't have edible ink without edible paper too, so Chef Cantu uses sheets of potato starch and soybean. The sheets are flavored by a powder made from dehydrated squash, soy sauce, sour cream, vegetables and sugar. After they are made, the chef will either fry, bake, or freeze them.
If you can't make up your mind as to what to order, all you have to do is tear off a piece of the menu to taste it. The restaurant also offers another interesting delicacy, 2-D sushi. They are made from [edible] photos of maki rolls that have been sprinkled with seaweed and soy flavoring. The next trick for this chef is to use a laser printer similar to those used in surgery, to sear meat from the inside out, leaving the meat more done at the middle, and less done on the edges.
